Gernal Cook Quench Chill System 

Gernal’s automatic cooking and cooling line for pasta, rice and vegetables is a revolutionary system with one cooking kettle and one or two cooling kettles (each with a capacity of 500, 1000, 1500 or 2000 litres). 

This makes it possible to prepare various dishes from start to finish, up to the point of packaging.

Depending on the required end temperature, a supplementary pre-cooling tank can lead to substantial savings in water and energy consumption (more than 50%). 

The pre-cooling water is used to cool down cooked products, while at the same time heating supplementary cooking water for the kettles.

The Gernal automatic cooking and cooling line works as follows:

the kettles are filled with water (hot water for the cooking kettle, cold and ice-cold water for the cooling kettles);

the cooking kettle is heated up;

raw/dry products are plunged from a 200L standard bin into the cooking water by means of a column loader;

during the cooking process, the basket automatically moves up and down, so as to achieve a homogenous temperature distribution of the cooking water and to prevent sticking during the cooking and cooling process;

at the end of the cooking process, the basket is automatically lifted out of the water and left to drain;

the contents are transferred to a basket in a pre-cooling tank. This basket moves up and down during the cooling process;

the cooking kettle is immediately refilled and brought up to temperature, so that a second cooking cycle can start;

the cooled products are emptied in waiting 200L bins.

Using Gernal drying, smoking, cooking and roasting units is opting for top quality of the 21st century. These units are multifunctional and meet the most stringent standards and requirements. 

Gernal developed its first drying, cooking, smoking and roasting unit in 1973. Since that time, this machine has been continuously optimised.

The Gernal line of drying, cooking, smoking and roasting units includes 12 different types, with a volume ranging from 2,000 to 25,000 litres. If required, Gernal can also develop systems with a larger capacity or to your specific design requirements.

Three types of smoke generators:

• sawdust: the sawdust is ignited with an electric element. A turbine blows air into the combustion chamber, after which the mixture of generated smoke and air travels through smoke channels into the smoking unit.

• friction smoke: pneumatic cylinders push a wooden beam onto a rotating grater, generating a cold smoke with low tar content. This generator is most convenient for smoking in a closed circuit without emitting smoke.

• liquid smoke: a natural wood smoke condensate, which is free of tar substances, is vaporised by pulses through sprinklers in the smoking unit

The Gernal MBK searing kettle combines all the excellent qualities of a traditional cooking kettle with agitator and a tilting frying pan.

This makes the searing kettle a very multifunctional machine:

frying & roasting: thanks to a temperature range of up to 240°C, meat and vegetables can be fried or roasted quickly under high temperatures.

cooking: thanks to the horizontal agitator with temperature-resistant scrapers, the products are cooked very evenly. 

Sticking and gluing of rice or dough products, burning of soups and sauces etc., are a thing of the past.

stewing: finally all processing steps in the preparation of a complete dish can be done with one and the same kettle: heating the butter or oil, browning the mea, frying the vegetables, adding herbs and spices, adding liquids, cooking and thickening if necessary :

Gernal pasteurisers with counter pressure are designed for quick pasteurisation of ready meals packed in foil. As a result, the storage life of the product is doubled, without any loss of taste or freshness in colour.

A computer-controlled program uses steam and compressed air to build up a constant counter pressure, so that trays are no longer deformed during heating and cooling. This reduces to a minimum the risk of welded seams tearing and packaging opening. Due to the very short cooking times

Gernal pressure cookers are highly suitable for a broad range of meals, ranging from simple soups to exquisite casseroles. The equipment can be optionally operated with electricity, gas or steam. Cooling facilities are provided by running water or ice water. To be able to withstand the constant counter pressure, these units are provided with a heavy, solid construction.

SVS-3000 process tracking and visualisation software is also available, assuring 100% quality control and process monitoring.

The Gernal product range includes various pasteurisers, with sizes ranging from 2,500 to 15,000 litres.

Vacuum Tumblers

Gernal Tumblers are designed for processing in which vacuum, precise temperature and thorough massage of the food product are required. 

General Vacuum Tumblers provide an optional glycol-filled cooling jacket, which assures perfect temperature control .

The machines are capable of both soft and more intensive massaging processing.

The V shaped ribs in the tumbler assure that the products are not scooped up but that they roll and turn over the bottom.
